Thick Leek and Potato Soup

I’m a huge soup fan.  I think it’s a great way to be healthy whilst also feeling like your getting something super luxurious and treat like.  Thick warming soups in winter are akin to a snugly duvet for the soul.  Wrapping you in warmth and comfort and they make the house smell amazing too!

  • x 3 leeks thinly sliced
  • x 1 white onion chopped
  • x 6 diced medium white potatoes
  • x 1 tsp of prepared garlic or garlic paste or 1 clove chopped
  • 1 litre of chicken stock
  • 1 tsp dried thyme
  • salt and pepper to taste
  • creme fraiche to serve (optional)
  • cooking oil or butter

heat a pan with oil or butter

Add leeks, onion and garlic and simmer until golden in colour and soft in texture

add potatoes and allow them to take on a little colour

pour in your chicken stock and add the thyme

simmer the mixture until your potatoes are soft

turn the heat off and whiz with a liquidiser or wand until smooth

add salt and pepper to taste and serve with a posh swirl of creme fraiche and hot crusty bread.
